That is why big cats, especially leopards take some portion of their kill and leave it in the branches of trees, intending to come back to the already ready meal the next time they feel hungry. So is this surprising that down the ages human beings have also been using different preserving techniques in order to keep food for a longer time? This food is preserved in vinegar and in oil, depending on your recipe. So in this beginners guide on how to preserve food/fruit, you are going to learn how to prepare fruit, before preserving it. And after that, you are going to cook fruit so that your family can enjoy it long after the season has gone. You can thus make jams, jellies, marmalades and use other traditional methods to save fruit. In ancient times, people used to make jams by pounding fruit pulp and sugar together before heating it. This is a method practiced in many parts of the East and in many ancient cultures, but when we have traditional recipes not asking for so much of exertion on our parts through using a pestle and mortar, why bother! In Elizabethan times, and even before that, jams were eaten with a spoon on special occasions in the form of conserves. That was because sugar was so rare that it was considered to be to be a luxury. Oliver and his friends singing about Food, Glorious Food dreamt of “jam, jelly and custard.” Of course, they had never tasted these delicacies, being inmates of an orphanage, where they would be fed just porridge, stale bread and soup morning, evening and night. Fresh fruit, no, they did not taste it. But we have plenty of access to fresh fruit and sugar. So now we can start enjoying the flavor of fresh homemade jams, marmalades and jellies, right now.

Step By Step Guide To Preserving Vegetables Fermenting Pickling Canning Dehydrating And Freezing Your Favorite Products

eBook Download

BOOK EXCERPT:

How to Use this Book This book is based on my desire to preserve vegetables in ways that my family will eat and do that as efficiently as possible. When possible, I preserve vegetables in a meal-ready way. Instead of canning a bunch of carrot slices in quart (1-L)-sized jars when I bring in a large carrot harvest, I’ll make a batch of Canned Spice Carrot Soup and a couple of jars of Fermented Mexican Carrots. Then, I’ll use the tops to make Frozen Carrot Top Pesto for the freezer. The carrot soup is the only time-consuming item; the other two can be put together while the soup is processing. The first part of this book is an overview of food preservation methods: canning, both water bath and pressure canning, dehydrating, fermenting and freezing. You’ll find the basics of how to use these methods to safely preserve vegetables, but you won’t find details for every scenario that could happen while preserving vegetables. I’ve written these chapters with enough information to get you started preserving the harvest, but not so much information that it leads to confusion and information overload. The rest of this book is focused on growing and preserving the most popular vegetables and herbs that are grown in the home garden. Each vegetable has its own chapter and, in that chapter, you’ll find instructions on how to grow, purchase, can, dehydrate, ferment and freeze that vegetable. You will also find recipes that highlight the vegetable; most of these recipes are for preserving the vegetable, but some recipes use the preserved vegetable. Most of the recipes are written so that you’ll preserve small batches at a time, simply because I find that adjusting recipes to scale up is easier than scaling down. If your family likes a recipe, or if you have enough of one vegetable to make two batches of a recipe, just double the ingredients and it will work out fine. The exception to this is any of the jam or jelly recipes; don’t ever double a jam or jelly recipe or you run the risk of it not setting up. I hope you read through the whole book to get a vision for how these different preservation methods can work together to stock your pantry with food your family will eat. Then, when a vegetable is in season, I hope you reread that vegetable’s chapter and make a plan for preserving all of the harvest in a variety of ways. Of course, I hope that some of our favorite preservation recipes become your family favorites, too.

Preserving Food A Beginner S Guide To Pickles Chutneys And Sauces

eBook Download

BOOK EXCERPT:

Preserving Food – A Beginner’s Guide to Pickles, Chutneys and Sauces Table of Contents Introduction Why Make Chutneys and Pickles? Tips for choosing best fruit and Vegetables Tips for Pickles and Chutney Making Chutneys Popular Chutneys Gooseberry Chutney Traditional Farmer’s Garlic Chutney Technique of Marination Using Brine Vinegars Making Spiced Vinegar Traditional Garden Pickle Traditional Piccalilli- Traditional Red Cabbage Pickles Soft vegetables – Sour Cucumber Pickles Tomato Pickle Testing Pickled Onions Sweet and Spicy Pickled Onions Non-vegetarian Pickles Traditional Pickled Wild Boar Pickled Eggs Traditional Tomato Sauce Appendix Garam Masala-Curry powder Conclusion Author Bio- Introduction Millenniums ago, when human beings were still food gatherers instead of food growers, they decided to find out some ways and means in which they could preserve food for a longer time. Winter was the time when they could not go out and hunt. So was the rainy season, especially they were living in rain forests and tropical areas. So if they found out some way in which they could preserve food, on which they and their tribe members could survive, this would make all the difference between life and death. And so through a lot of experimentation, the ideas of pickles, chutneys, jams, jellies, preserves, conserves, spiced fruit and other ways of preserving food, as well as fruit and vegetables came into existence. Today, millenniums later, there is absolutely no fruit and vegetable, which has not been turned into a pickle, chutney, jam, jelly or conserve, by some cook. Even meat in the form of venison and boar has been pickled in the east, down the ages, as well as eggs. Too many eggs, and you are worried about preserving them? Do as the ancient Chinese did. Preserve them in egg pickles. So this book is going to tell you how to make the best use of all those extra vegetables and fruit in your garden, and turn them into a valuable food source, which can be eaten later.
