In Everyday Food Practices, Tarunna Sebastian explores the teaching and learning dimensions of people’s food choices and practices as they are played out in their everyday lives and local community. Using multi-sited critical ethnographic methodology, Sebastian followed people on their journeys while planning, shopping, preparing, cooking, and eating food. These journeys reveal that supermarket corporations play a hegemonic role, creating and sustaining class-based diets and cultural dynamics which undermine individual agency. Rebuking corporate hegemony, food education at counter-cultural sites—such as farmers’ markets, food cooperatives, and community gardens—seeks to empower people with knowledge and skills derived from socially and environmentally sustainable food curricula. However, class and ethnicity-based patterns of engagement compromise learning at these sites. Sebastian argues that, by contrast, the embodied experiences of inter-generational, home-based food practices are more effective in teaching sustainable cooking skills and the production of healthy meals.

Agricultural and food consumption practices are the most important contributors to ecosystem degradation and climate change. Consumers are called on to take responsibility for sustainable development; to consider the environment in their everyday life, to choose more sustainably produced goods and services. However, often consumers are not directly involved in food production and preparation. Today many of the meals we eat are prepared by someone other than ourselves. In addition, environmental and social issues of food production might be important to us but they have to be weighed up against a range of situational and personal considerations. Thus 'making a sustainable choice' can be far from straightforward. This book explores the question 'how sustainable food consumption can be encouraged' using social practices theory. This approach focuses not on the individual behaviour of consumers, but on everyday food practices (like shopping for food, eating lunch at work, etc.) and their context. The book discusses how Dutch consumers engage in sustainable food consumption on an everyday basis, and how consumers with different grocery shopping practices differ in this engagement. A second study considers the sustainable development of food provisioning within business catering (food procurement and provisioning). Here we discover the importance of food professionals and the opportunities that canteens and kitchens offer to explore more sustainable ways of eating. Both studies illustrate how a context-oriented approach leads to insights on where we find leverage points for changing consumption patterns.

Policy-related, academic and populist accounts of the relationship between food and class tend to reproduce a dichotomy that privileges either middle-class discerning taste or working-class necessity. Taking a markedly different approach, this collection explores the classed cultures of food practices across the spectrum of social stratification. Eschewing assumptions about the tastes (or lack thereof) of low-income consumers, the authors call attention to the diverse, complex forms of critical creativity and cultural capital employed by individuals, families and communities in their attempts to acquire and prepare food that is both healthy and desirable. The collection includes research carried out in the United States, Canada, Mexico and Denmark, and covers diverse contexts, from the intense insecurity of food deserts to the relative security of social democratic states. Through quantitative and qualitative cross-class comparisons, and ethnographic accounts of low-income experiences and practices, the authors examine the ways in which food practices and preferences are inflected by social class (alone, and in combination with gender, ethnicity and urban/rural location). The collection underlines the simultaneous need for the development of a more nuanced, dynamic account of the tastes and cultural competences of socially disadvantaged groups, and for structural critiques of the gross inequalities in the degrees of freedom with which different individuals and groups engage in food practices. This book was originally published as a special issue of Food, Culture & Society.
