Meatless Mondays, Wheatless Wednesdays, vegetable gardens and chickens in every empty lot. When the United States entered World War I, Minnesotans responded to appeals for personal sacrifice and changed the way they cooked and ate in order to conserve food for the boys "over there." Baking with corn and rye, eating simple meals based on locally grown food, consuming fewer calories, and wasting nothing in the kitchen became civic acts. High-energy foods and calories unconsumed on the American home front could help the food-starved, war-torn American Allies eat another day and fight another battle. Food historian Rae Katherine Eighmey engages readers with wide research and recipes drawn from rarely viewed letters, diaries, recipe books, newspaper accounts, government pamphlets, and public service fliers. She brings alive the unknown but unparalleled efforts to win the war made by ordinary "Citizen Soldiers"--farmers and city dwellers, lumberjacks and homemakers--who rolled up their sleeves to apply "can-do" ingenuity coupled with "must-do" drive. Their remarkable efforts transformed everyday life and set the stage for the United States' postwar economic and political ascendance. Rae Katherine Eighmey is a food historian who has written several historical recipe books and coauthored Potluck Paradise: Favorite Fare from Church and Community Cookbooks. An avid foodie, she tested all the recipes in this book for modern kitchens.

BOOK EXCERPT:
During the Second World War, as Canada struggled to provide its allies with food, public health officials warned that malnutrition could derail the war effort. Posters admonished Canadians to "Eat Right" because "Canada Needs You Strong" while cookbooks helped housewives become "housoldiers" through food rationing, menu substitutions, and household production. Ian Mosby explores the symbolic and material transformations that food and eating underwent as the Canadian state took unprecedented steps into the kitchens of the nation, changing the way women cooked, what their families ate, and how people thought about food. Canadians, in turn, rallied around food and nutrition to articulate new visions of citizenship for a new peacetime social order.

America's Promise is a concise, highly readable introduction to American History. Designed to clearly explain major themes and events, it also captures the rich and often amusing character of the American people. The strong narrative emphasizes public life and how individuals constructed public structures in which they lived and worked. Including the latest scholarship in social, cultural, and political history, the work integrates the history and importance of women and minorities. To aid students in learning and reviewing, each chapter begins with a preview of the main ideas that will be discussed and ends with a conclusion that reinforces the key concepts. Rather than being simply declaratory signposts, section headings highlight main ideas and help carry along the narrative. A glossary defines main terms, and a timeline helps students keep track of events. Selected readings are also included to encourage further reading and study. Finally, carefully selected illustrations and maps portray, pinpoint, and illuminate important episodes in American history. The most concise and competitively priced book available, America's Promise is a breath of fresh air in the introductory market.

BOOK EXCERPT:
Zusammenfassung: Since the late-1990s, diplomatic historians have emphasized the importance of international and transnational processes, flows, and events to the history of the United States in the world. Rethinking U.S. World Power provides an alternative to these scholarly frameworks by assembling a diverse group of historians to explore the impact of the United States and its domestic history on U.S. foreign relations and world affairs. In so doing, the collection underlines that, even in a global age, domestic politics and phenomena were crucial to the history of U.S. foreign policy and international relations more broadly. Daniel Bessner is the Annett H. and Kenneth B. Pyle Associate Professor in American Foreign Policy in the Henry M. Jackson School of International Studies at the University of Washington, USA. Michael Brenes is Co-Director of the Brady-Johnson Program in Grand Strategy and Lecturer in History at Yale University, USA

This historical survey explores the events that lead to the passage of the 18th Amendment. Descriptions of life during prohibition, and the events that led to its repeal are shared. Readers will evaluate whether it violated personal liberty, and whether the prohibition law should be modified or repealed. This book also includes personal narratives from those who experienced prohibition firsthand, including a man's recollection of going to speakeasies as a teen; another's recounting of his career as a bootlegger; and a prohibition agent's tales of enforcing the law.

Lose weight. Quit smoking. Exercise more. For over a century, governments and voluntary groups have run educational campaigns encouraging Canadians to adopt healthy habits in order to prolong lives, cost the state less, and produce more efficient workers. Be Wise! Be Healthy! explores the history of public health in Canada from the 1920s to the 1970s. Through the Health League of Canada, people were urged to drink pasteurized milk, immunize their children, and avoid extramarital sex. Health was presented as a responsibility of citizenship – and doctors and dentists as expert guides. Public health campaigns have reduced preventable deaths. But such campaigns can also stigmatize marginalized populations by implying that poor health is due to inadequate self-care, despite clear links between health and external factors such as poverty and trauma. This clear-eyed study demonstrates that while we may well celebrate the successes of public health campaigns, they are not without controversy.
