Significant Food is a collaborative work of textual analysis and criticism that chews on the role and prominence of food in American literature. The volume offers close readings of many well-known, and some less well-known, examples of American writing, as studied through the food culture sensibilities of a well-stocked cupboard of contributors who offer their analyses for public consumption. Editors Jeff Birkenstein and Robert C. Hauhart find that literary criticism has focused on the role food plays in literary production to a greater extent than recognized at first glance and that its role has become increasingly common only in the last two decades. Still, while there is critical commentary regarding authors’ use of food across the expanse of American literature, there has been a lack of a unifying critical theory to guide these analyses. Birkenstein and Hauhart offer the theory of “significant food”—a method that asks literary critics to evaluate and assess the extent, nature, and role that food plays in literary production. When food and “food moments” are used intensively and “significantly” within the drama, memoir, poem, novel, short story, or other writing, then one can say that it has achieved a status that makes it indispensable to the work at hand.

Gastronomy, particularly gourmet tourism, is widely acknowledged as having a powerful impact on local development. Public policies have developed in response to research, highlighting gastronomy as key in a successful tourism economy. However, research thus far has not fully explored the underlying mechanisms of gastronomic tourism, in particular the marketing and perception of quality, on economic development. This book considers how the quality of products, places, and experiences contributes to the desirability and competitiveness of gourmet touristic destinations. The contributors present theoretical and empirical studies to create an original conceptual framework for regional development based on the quality of products, of places, and of touristic experience. It also examines the ways in which quality is linked to identity, diversity, innovation, and creativity. With an interdisciplinary approach, this book will be of interest to researchers in tourism and hospitality, regional studies, and human geography, as well as to tourism development professionals and policymakers in the areas of rural and local development.

Food insecurity is a complex ‘wicked’ problem that results from a range of unstable and uncertain physical, social, cultural and economic factors that limits access to nutritious food. Globally, 800 million people are under-nourished, and around 2 billion are overweight/obese or have micronutrient deficiency. These populations are largely positioned in developing countries where disease burden is high and impacts health budgets and productivity. Similarly developed countries, cities and neighbourhoods are experiencing a greater emergence of vulnerable populations. This is in part explained by the change in the food production and manufacturing, the retraction in economic climates, the increase in food price, and in some regions reduced food availability and access.Vulnerable groups include but are not limited to migrant populations, Indigenous people, elderly, pregnant women, those with disability, homeless, young children and youth. Poor nutrition at significant periods of growth and development and during life impact long term health outcomes increasing non-communicable disease prevalence, health cost and reducing economic productivity.

Population migration has long been, and remains today, one of the central demographic shifts shaping the world around us. The world’s history—and its health—is shaped and colored by stories of migration patterns, the policies and political events that drive these movements, and narratives of individual migrants. Migration and Health offers the most expansive framework to date for understanding and reckoning with human migration’s implications for public health and its determinants. The people of Tokelau have a unique Polynesian identity and are connected to the ocean through their traditional ways of life, including fishing and navigating the waters. Due to their remote location and small population, the people of Tokelau face challenges such as limited economic opportunities and a lack of access to resources and infrastructure. However, the government of Tokelau has been working to improve the lives of its citizens through sustainable development projects and partnerships with neighboring countries.
