BOOK EXCERPT:
Our desires and our fears are woven into a tangled web of conflicts. We want both to eat dessert and to be thin. We want money but don’t want to work. Anything that threatens our sense of self and its striving for happiness is perceived as a threat to our very lives—the response to which is defensiveness, anger, aggression, and violence.Vinegar into Honey proposes a new paradigm for understanding the relationship between stress, anxiety, anger, and depression. Leifer provides detailed instructions for working with anger and other painful emotions. The process of transforming suffering into equanimity and compassion is central in Buddhist psychology and practice. Each of the steps in Vinegar into Honey reflects views and methods drawn from Buddhist tradition. Leifer’s work holds promise for psychotherapists and their patients individuals seeking to understand and work with their anger and people interested in the interface of Buddhism and"psychotherapy.

BOOK EXCERPT:
Buttressed by input from scholars, diplomats, and observers with an intimate knowledge of U.S. foreign policy, Honey and Vinegar examines "engagement"—strategies that primarily involve the use of positive incentives. The book contends that although engagement has received little scrutiny relative to other, more punitive foreign policy approaches, it has great potential as a tool for modifying the behavior of regimes with which the United States has significant disagreements.Heightened awareness of the costs associated with the use of sanctions or military force has catalyzed a search for policy alternatives. In this quest to find other appropriate policy options for pursuing foreign policy goals, strategies of engagement warrant serious consideration. As argued in these pages, the use of incentives, rather than penalties, may be particularly well suited to the post–Cold War world, where globalization has made the economic isolation of any country difficult to achieve. At the same time, the collapse of the Soviet Union has meant that American carrots may be especially savory to many regimes once reliant on Soviet support. Paradoxically, engagement can be a good choice, even when it fails, in that it can open the door for other policy options. For instance, the two years in which America tried to engage Saddam Hussein before the Gulf War worked to the advantage of the United States later. After Iraq's invasion of Kuwait in 1990, American efforts to build a military coalition to oppose Iraq were facilitated by the sense in the region that the United States had earlier pursued a conciliatory policy, but to no avail.Contributors to this volume have provided seven cases exploring episodes of engagement: relations between the United States and China; Europe's "Critical Dialogue" with Iran; U.S. engagement with Iraq from 1988 to 1990; U.S. efforts to engage North Korea; the combination of U.S. persuasion and coercion toward South Africa in the apartheid era; the les

BOOK EXCERPT:
From food writer and historian Angela Clutton comes The Vinegar Cupboard, demonstrating the many great ways vinegars can be used to balance and enhance flavours, and enable modern cooks to make the most of this ancient ingredient. There aren't too many ingredients which manage to bring flavour and adaptability to recipes and are actively good for you, but vinegar manages it, and this must-have new book looks at how they have woven their way through culinary and medical history for thousands of years, and highlight the ways we can all benefit from vinegar in our diet. There is a growing interest in vinegars and a recognition of the role acidity plays in cooking, and within these page, Angela Clutton shows how much can be achieved using just red or white wine vinegar in your cooking, as well as exploring the vast array of vinegars available. The range of vinegars on the market are expanding rapidly, and you can easily find fruit, herb, sherry, cider, malt, rice, balsamic and many types of red and white wine vinegars (from rioja through to champagne) on your supermarket shelves. The Vinegar Cupboard encourages cooks to have an arsenal of as many varieties of vinegars as they can fit in their kitchen; while we don't expect everyone to have a vinegar cupboard, we'd like to think this book will encourage a vinegar shelf at least! Info-graphics and flavour wheels enhance the recipes, ensuring this is a usable and accessible book for all home cooks.

BOOK EXCERPT:
Apple cider vinegar has a long history as a folk remedy for a variety of health conditions and, as a result, has achieved cult status among natural health enthusiasts. But many people don’t realize that there is a whole world of options beyond store-bought ACV or distilled white vinegar. In fact, vinegar can be made from anything with fermentable sugar, whether leftover juicing pulp or brown bananas, wildflowers or beer. With her in-depth guide, Kirsten K. Shockey takes readers on a deep dive into the wide-ranging possibilities alive in this ancient condiment, health tonic, and global kitchen staple. In-depth coverage of the science of vinegar and the basics of equipment, brewing, bottling, and aging gives readers the foundational skills and knowledge for fermenting their own vinegar. Then the real journey begins, as the book delves into the many methods and ingredients for making vinegars, from apple cider to red wine to rice to aged balsamic. Along the way, Shockey shares insights into vinegar-making traditions around the world and her own recipes for making vinegar tonics, infused vinegars, and oxymels. This publication conforms to the EPUB Accessibility specification at WCAG 2.0 Level AA.
