Alcohol has always been an issue in public health but it is currently assuming increasing importance as a cause of disease and premature death worldwide. Alcohol: Science, Policy, and Public Health provides an interdisciplinary source of information that links together, the usually separate fields of, science, policy, and public health. This comprehensive volume highlights the importance of bringing scientific knowledge to bear in order to strengthen and develop alcohol public policy. The book looks at the historical evolution of alcohol consumption in society, key early studies of alcohol and disease, and the cultural and social aspects of alcohol consumption. It then goes on to cover the chemistry and biology of alcohol, patterns of consumption, gender and age-related issues, alcohol and injury, alcohol and cancer and non-malignant disease, and various current therapeutic aspects. The book concludes with a section on alcohol policy, looking at issues of poverty, the availability of alcohol and alcohol control measures. This major reference, written by international leaders in the fields of alcoholism and alcohol policy, provides a comprehensive study of one of the foremost health problems in the world, and represents the highest standards of research within the field. It will be valuable to physicians and health professionals involved with patients with alcohol-related problems, scientists, public health specialists, health policy specialists, researchers and legislators as well as students of public health.

"Every bit as good as the beer itself." —SIR RICHARD BRANSON, Founder and Chairman, Virgin Group So what does it take to be a successful entrepreneur? There are many different answers, but according to Karan Bilimoria, founder of Cobra Beer, do the following and you won't go far wrong: be creative, go the extra mile, have confidence in yourself and your team, get lucky, be disciplined, take the long-term view, learn constantly and don't be afraid of serious amounts of hard work. Bottled for Business gets to the heart of how and why Cobra Beer has developed into one of the world's best-loved brands. It is a story infused with the passion, belief, energy and vision of its founder and shares the ups and downs of how Cobra got to where it is today. But more than that, it is a story of inspiration for anyone who has dreams of running their own business. PRAISE FOR BOTTLED FOR BUSINESS "The inside scoop from one of the country's leading entrepreneurs—essential reading." —Richard Reed, Co-founder, Innocent Drinks "Inspiring! A fascinating story of one entrepreneur's journey, worth the cover price for the 'Financing Cobra' chapter alone. Bilimoria has learned every trick in the book about how to finance a growing business. If you're running a growing business, and don't want to give away the store, READ THIS BOOK!" —John Mullins, Professor, London Business School and author, The New Business Road Test "An inspirational story." —Sir Martin Sorrell, CEO, WPP "Bottled for Business is the extraordinary account of a Cambridge-educated Indian lawyer's dogged pursuit against the odds. The book is compelling, not least because it strikes at the Achilles heel of entrepreneurship in that it details the translation of a vision into reality. A clever and useful book." —Dr Mark de Rond, University Senior Lecturer at Judge Business School and Fellow of Darwin College, Cambridge University "Reflecting the enormous success of his business career, I have no doubt that Bottled for Business will be a bestseller." —Lord Levene, Chairman, Lloyd's, and former Lord Mayor of London

The production of fermented beverages is nowadays a technically sophisticated business. Many people outside it, however, even if they are familiar with the food industry overall, fail to appreciate just what advances have been made in the last twenty or thirty years. In part this is due to the blandishments of advertising, which tend to emphasise the traditional image for mass market promotion at the expense of the technological skills, and in part due to a lack of readily available information on the production pro cesses themselves. This book attempts to remedy the balance and to show that, far from being a quaint and rustic activity, the production of fermented beverages is a skilled and sophisticated blend of tradition and technology. We have chosen to organise the book principally by individual beverages or groups of beverages, with the addition of a number of general chapters to cover items of common concern such as fermentation biochemistry, adulteration, filtration and flavour aspects. While we have tried to eliminate excessive duplication of information, we make no apologies for the fact that certain important aspects (e. g. the role of sulphur dioxide in wine and cidermaking) are discussed on more than one occasion. This only serves to underline their importance and to ensure that each chapter is moderately self-contained.
