BOOK EXCERPT:
A book such as this one necessarily entails the effort of many individuals. Its first seed was a workshop in 1988 that one of us (K. L. C. ) designed and directed at the City University of New York Graduate Center as part of a series of conferences and workshops on topics in neuropsychology spon sored by the Institute for Research in Behavioral Neuroscience (IRBN). At that time, studies in the efficacy of olfaction as an alternative modality of stimulation in brain-injured adults were taking place at IRBN. The work shop helped to spark many new ideas among IRBN's staff, leading to various projects in clinical intervention, some of which are discussed in this volume. We soon discovered that clinical interest in olfaction was steadily increasing, and that this modality was in many ways on a par with the rest. Along with progress in the clinical investigation of olfaction, an abundance of work has been published in the basic science of the field. Ideas such as the regeneration of olfactory neurons and the use of these neurons in trans plantation took hold and were proved to be viable ones. These develop ments along with a profusion of techniques that allow a closer look at the anatomy and physiology of olfaction, have contributed to the accelerated pace with which this field is now advancing. BOOK EXCERPT:
The largest collection of basic, clinical, and applied knowledge onthe chemical senses ever compiled in one volume, the third editionof Handbook of Olfaction and Gustation encompassrecent developments in all fields of chemosensory science, particularly the most recent advances in neurobiology, neuroscience, molecular biology, and modern functional imagingtechniques. Divided into five main sections, the text covers thesenses of smell and taste as well as sensory integration, industrial applications, and other chemosensory systems. This isessential reading for clinicians and academic researchersinterested in basic and applied chemosensory perception.

BOOK EXCERPT:
The sense of smell is probably the most important sense to a large number of the animal species on Earth and the aim of the study of olfactory cell biology is to understand the cellular basis on which olfactory-driven behaviour is based. In this book the author presents a critical analysis of what is known about the olfactory sensory cells in both the nasal cavity and the vomeronasal organ. Although the emphasis is on mammalian olfaction, basic issues that have been addressed by research on other vertebrates and invertebrates are also discussed. Throughout the book the premise is that we can only more thoroughly comprehend normal behaviour and dysfunction once we have a detailed understanding of the cells and tissues involved in the sense of smell.

Comprehensive Overview of Advances in OlfactionThe common belief is that human smell perception is much reduced compared with other mammals, so that whatever abilities are uncovered and investigated in animal research would have little significance for humans. However, new evidence from a variety of sources indicates this traditional view is likely

BOOK EXCERPT:
Eating is defined as the act of taking food into the mouth, chewing and then swallowing it for nourishment. The purpose of this volume is to present a number of up-to-date scientific reviews on the mechanisms involved in the process of eating and to introduce the reader to some of the problems encountered when these complex processes malfunction. Topics include a discussion on the peripheral mechanisms of taste and smell, taste and olfactory processing in the brain and its relation to the control of eating, and a section on mastication with an account of the scientific basis of masticatory disorders. The control mechanisms involved in salivation and swallowing are also extensively reviewed. Because this book reviews the fundamental understanding of the physiological mechanisms involved in eating and includes an insight into the scientific basis of the malfunction of these mechanisms, it will be of equal value to both clinical and basic scientists. In particular, basic and clinical oral biologists and neurophysiologists, dental and medical researchers and postgraduate students will find it a valuable source of information.

BOOK EXCERPT:
With over 350 illustrations, this impressive volume traces the rich history of ideas about the functioning of the brain from its roots in the ancient cultures of Egypt, Greece, and Rome through the centuries into relatively modern times. In contrast to biographically oriented accounts, this book is unique in its emphasis on the functions of the brain and how they came to be associated with specific brain regions and systems. Among the topics explored are vision, hearing, pain, motor control, sleep, memory, speech, and various other facets of intellect. The emphasis throughout is on presenting material in a very readable way, while describing with scholarly acumen the historical evolution of the field in all its amazing wealth and detail. From the opening introductory chapters to the concluding look at treatments and therapies, this monumental work will captivate readers from cover to cover. It will be valued as both an historical reference and as an exciting tale of scientificdiscovery. It is bound to attract a wide readership among students and professionals in the neural sciences as well as general readers interested in the history of science and medicine.
